QUINOA WITH LEEK AND CURRANTS
This makes a large amount. You can halve the recipe if you want. I prepare this for my health conscious friends. Don't let the word "health" turn you off. It's really good tasting.
Ingredients
1 3/4 cup quinoa
2 2/3 cup vegetable stock (or water)
4 small leeks vegetable oil for sautéing
1/2 cup canned tomatoes (or 2 fresh tomatoes, peeled and chopped)
5 T (rounded 1/4 cup) currants or one or two grated carrots
1 T ground cumin
1 t cinnamon
1 t garlic powder
1/2 t turmeric
Method
Slice leeks in half length-wise. Wash the larger leaves very well. Chop washed leeks cross-wise into thin slices. Place quinoa in a bowl filled with water, swirl it around, and keep changing the water until it is clear. Saute leeks until limp and reduced. If using carrot, sauté it too. Add spices and stir until well mixed. Add quinoa and cook for a couple minutes. Add stock or water, chopped tomatoes, and currants if using them. Bring to a boil, lower heat and simmer covered for 15-20 minutes.
