Blueberry Lemon Bread
Ingredients
2 cups flour
1 ½ teaspoon baking powder
¼ teaspoon salt
1 cup sugar
½ cup oil
2 eggs
1/3 cup milk
2 teaspoons grated lemon peel
1 to 2 cups blueberries
Method:
Preheat the oven to 350 degrees. Grease and flour a 9 by 5 loaf pan. (Note: I find that this works better with the mini loaf pans you can buy at the grocery.) Sift together flour, baking powder and salt. Beat together the rest of the ingredients (except the blueberries). Fold in the blueberries. Bake for 50 to 60 minutes or until the loaf looks golden brown and a toothpick comes out clean.
