Here Dr. Markello is showing us this freezer full of nitrogen and "fresh" HPS blood samples. Earlier I'd asked Dr. Markello how it was they could use samples that were so old. I know that you can freeze things like this, but it still amazes me. He explained that they can take a blood sample out of here, thaw it out, and it's as if it had been sitting on the lab bench an hour.

Ratner's Cheesecake and plain cookies Ratner's was a Jewish dairy restaurant in the lower East Side of Manhattan. This recipe, from my disintegrating, no longer in print Ratner's cookbook, is the closest I've ever gotten to reproducing the rich, heavy cheesecake my mother made when I was a kid. It's worth the time it takes to prepare and every last calorie. Dough Can be prepared in advance. Makes enough for two cakes.
